Jub Jubs are a sugar coated gelatine candy in fruity flavors which is popular in Trinidad and Tobago.

Alliyssa Rose Jub Jubs

Ingredients:

4 cups simple syrup

Granulated gelatin

6 pkts (packets) flavored sugar crystals ( 3 different flavors and colors)

4 oz. granulated sugar

Method:-

When syrup reaches the large bubbling stage, remove from heat.

Stir in soaked gelatin ( granulated gelatin soaked in cold water). Pour into 3 lightly oiled shallow tins and open into each 2 pkts. flavored sugar crystals. Stir with up and down motion to avoid sugaring.

When well blended, leave overnight, remove from container. Cut into strips . Roll into granulated sugar. Cut into cubes and  mix flavors and colors.
